So you planted an herb garden to save money but find that you end up throwing out extra herbs. Thank goodness for savvy tips like this one.

How to Preserve Herbs by Freezing Them

If you have oily herbs, freezing them is a better option than drying them.

  • Chop the herbs you want to freeze.
  • Sprinkle the herbs into ice cube trays. You can also mix different herbs into the same cube. Put in the typical amount of herbs you use in cooking into each ice cube slot.
  • Cover the herbs with water and then freeze the herb cubes. You may also cover the herbs with stock or olive oil.
  • Once the herb cubes are frozen, pop them out and store them in freezer bags in the freezer. Be sure to remove as much air as you can from the bags before you put them in the freezer.

When you want herbs for cooking, simply take out a cube and add it to the food you're cooking. You may thaw out the herb cube first or not - but remember to account for the frozen liquid.
